Homemade Lemon Curd
Do you dream of a fabulous dessert that takes mere minutes to make, and simply sets in the fridge overnight? Introducing the basic lemon curd, your dinner party saviour.
Lemon curd is a versatile, tasty and light dessert that even the most inexperienced cook could whip up. All you need are some nice glasses or jam jars for presentation, basic ingredients and ample fridge space.
- 4 eggs
- 4 egg yolks
- 200g / 7oz caster sugar
- 6 lemons (juice of all 6 and zest of 3)
- 150g / 5oz unsalted butter
- Optional: biscuit / granola / strawberries as toppings
Make sure the glasses or jars you’ll be serving your dessert in are clean and fully dry, as any moisture on the inside could affect how the curd sets.
- Whisk all the eggs and egg yolks in a large, heatproof bowl until fully combined.
- Add in the sugar, juice of six lemons and zest of three lemons.
- Cut the butter into small cubes, and add this to the mixture.
- Immediately set the bowl over a pot of simmering water (making sure the bowl doesn’t actually touch the water).
- Stir the mixture with a wooden spoon until the butter melts, then switch to a whisk and keep stirring for another 10 to 12 minutes as the mixture cooks over the heat. It should have the consistency of custard.
- Pour the hot lemon curd mixture directly into the jars / glasses, and leave them to cool.
- Once cooled, place your desserts into the fridge to cool for two hours. You can cover with a lid or piece of parchment paper if leaving in the fridge overnight.
Once fully cooled and set, your desserts are ready to be served! Sprinkle some chopped strawberries, crushed biscuit or granola over the top for added flavour and texture.
You can even leave the curd in the fridge for up to one week, which means you can prepare this tasty treat days in advance of your dinner party – ideal for a busy host!
